Cranberry Almond Muffins















One of my favourite things with a morning latte!
So, if you have half an hour to spare
make this delicious treat and start your morning sweet :-)

Ingredients:
- 250 g of flour (= 2 cups)
- 100 g of dark Muscovado sugar (= 1/2 cup)
- 2 eggs
- 100 grammes of butter (melted and cooled)
- 200 grammes of kefir or sour cream (3/4 cups)
- 1 1/2 teaspoon of baking powder
- 50 g of almonds (raw, skinless and chopped)
- 50 g of dried cranberries

Optional: 4-6 squares of white chocolate, crushed
When you add chocolate, remember to add less sugar.

SERVINGS: 12 muffins

Step 1:
Combine the dry ingredients in a bowl.
Add the melted, cooled butter, kefir (or sour cream) and eggs.
Mix well by hand or using a blender with a whisk attachment.









Step 2:
Fold in the roughly chopped, skinless almonds
and cranberries. Stir gently.
(Optionally: add in the chopped white chocolate)















Step 3:
Scoop out the muffin batter into muffin cups
or a muffin tray.















Step 4:
Preheat the oven to 190ÂșC.
Bake for 16-20 minutes.
Check center of a muffin with a toothpick.















Taste delicious with a morning coffee :-)
